So a few summers ago we were on a walk, and our neighbor stopped us. After introducing himself to us he offered us some raspberry plants. He had a huge garden full of all sorts of plants. I was so excited I made my husband come back that day and help me dig some plants up and transplant them into our little garden in our back yard. The first year we didn't get much raspberries, but now a few years later we finally have enough to bake a pie, muffins, or some yummy bread.

This summer after week after week of fresh raspberries, I decided to make my own pie. Dressed up in my Soul Flower skirt and homemade aprons, me and my daughter cooked the very first raspberry pie of the summer!
Make your very own pie! There are so many awesome recipes to try, this is a mixture of a few, you can make it gluten free, vegan, or regular, whatever you want.
Gluten Free & Vegan Raspberry Pie Recipe:
Crust: (double if making a top crust)1/2 C. Sugar 1 1/2 C. GF flour mix (I use 1 c. brown rice, 1/3 c. potato starch & 1/4 c. tapioca flour, could also use regular flour) 1/2 C. Shortening (or cold butter is not vegan)1 tsp. Xanthan gum 1/3 c. Cornstarch1 tsp. Vanilla xtract 1 T. Apple cider vinegar & 1 T. water & 1 tsp. Baking powder (or one egg is not vegan)Mix all dry ingredients. Then add the shortening in small spoonfuls, until crumbly and mixed. Next add egg the vinegar, water & baking powder (or egg). Roll out onto plastic wrap (with a layer of plastic wrap over the top) then transfer to pie pan, then fill with fruit filling (top with another layer of pie crust if desired) Bake 400 for 45 minutes.
Raspberry pie filling:4 c. Raspberries (I used fresh, but you can use frozen, just add a bit more flour and thaw)1 C. sugar 2 T. Tapioca 1 T. Lemon juice 1/4 tsp. cinnamon 1/8 tsp. salt 4 T. GF flour or cornstarch
